Life as a Vegetarian

I didn't set out to become a vegetarian; it just evolved. A friend of mine tried retiring in Mexico, in a beautiful place near Cornavaca. I sat in his rented, and walled, gardens with my Corona beer, and read some of his literature.

One book on vegetarianism caught my attention so I read it carefully. (One might say that I 'vegetated' for a few days.)

As I looked at my state of health, I saw it might be improved if I cut down on my meat consumption. I decided to eliminate the cured meats from my diet. There would be no more cold cuts, cured ham and bacon, with their nitrates, nitrites and excess salts, in my meal plans. This did not seem like a difficult thing to do, so I started immediately.

As time passed, and I learned how to prepare meals in a different way, I added more and more meatless meals to our menu. It wasn't too long before the idea of eating dead animals seemed a bit repulsive. I quit entirely and haven't consciously eaten meat since. My wife tried poultry a few times but eventually gave it up totally.

Vegetarianism is not for everyone, but I believe everyone would benefit from a reduced meat intake.

Maybe someday I will put my one hundred or so recipes on this site, but for now have a look at these links to vegetarian cooking.
